The secret to making the best green chile breakfast burrito lies with the sauce. To make this sauce, we start with a roux. This will bring out the nuttiness of the flour and add complexity to the sauce, which will bring it to another level. If you haven’t made a roux before, it’s okay to take your time and err on the lighter side.
