Frittata for One

    You don’t need to be feeding a crowd to enjoy a delicious, homemade frittata for breakfast. This frittata for one is a meal you can throw together with just a few ingredients from your fridge and less than thirty minutes of your time.

    Featuring a fail-proof flavor combination, this egg recipe is simple, classic, and delicious, and one that you’ll find yourself turning to again and again. 

    This frittata for one is great with a mug of coffee or tea to start the morning. You can also have it with a small tossed salad, some sliced fruit, or a few slices of buttered wheat toast. I like to keep things simple and eat it alongside something I can prepare in the last few minutes before the frittata comes out of the oven.

    I think this dish tastes the best when the broccoli has been sautéed in the skillet first. This helps develop the flavor of the broccoli and gives it a little char.

    You can also cook the broccoli raw, but you should cut the pieces a little smaller. The veggies cooked raw will have a little bit more bite, which might be what you are going for! If you do use raw, use olive oil to oil your pan before you bake the eggs.

    What You Need To Make a Frittata for One

    This recipe requires large eggs, a crown of broccoli, cheddar cheese, salt, pepper, paprika, and olive oil. You can omit the paprika if that isn’t a flavor you like. I used sweet paprika, but for a deeper, woodier flavor you can try smoked paprika.

    I recommend using sharp cheddar cheese, but you can also use mild or medium if you prefer those flavors more.

    • Large eggs
    • Broccoli
    • Sharp cheddar cheese
    • Salt
    • Ground pepper
    • Sweet paprika
    • Olive oil

    Equipment: 

    This dish requires a sharp knife, a bowl, a whisk, a cutting board, an oven-safe pan, and an oven mitt. Don’t forget the oven mitt! You will be baking this dish in the oven and it’s easy to forget that the handle is hot when you go to remove the pan from the oven. A thick, doubled-over tea towel can also work, but be very careful not to burn yourself. I speak from experience! 

    How To Make a Frittata for One

    Make the broccoli: Wash and dry the broccoli. Cut the broccoli into small pieces (1-2 inches long). Heat a small frying pan with oil on medium heat and saute the broccoli for 4-5 minutes or until the broccoli starts to brown. Remove from the heat.

    Prepare the eggs: Whisk three eggs in a bowl. Add a pinch of salt and pepper. Set aside. 

    Prepare the cheese: Slice the cheese into thick long strips. Set aside.

    Assemble the Frittata: Pour the eggs into the frying pan. Add strips of cheese on top. Sprinkle paprika over the top of the cheese and eggs.

    Bake: Place the frittata in an oven preheated to 350ºF and bake for 20-25 minutes, or until the eggs have just set. After 15 minutes, check for doneness and reduce cooking time if the center is beginning to set.

    Once cooked, remove from the oven.

    Can I use pre-shredded cheese?

    You can use pre-shredded cheese. By using block cheese, I can create little pockets of gooey cheese to dig into, but pre-shredded cheese can be a lot more convenient. You can also grate your own cheese if you prefer the cheese to be more evenly distributed across the dish. If you use pre-shredded or grated cheese, I recommend scattering a generous amount of cheese across the top of the dish before you bake it.

    Can I make this in advance?

    Yes, this dish can be made in advance, but it is best when it’s fresh out of the oven. If you do reheat it, the best way to do so is in a warm oven. You can also put it on a microwave-safe plate and reheat it in the microwave. Use short time increments to reheat the eggs so that you can check the eggs frequently and avoid making them rubbery.

    Can I add anything else to this to make it more like a quiche filling?

    To make this dish a little bit richer and more like a quiche filling, you can add ¼ cup of heavy cream. To make the dish just creamier, consider adding a soft cheese like ricotta to the egg mixture. Stick with something that has a fairly neutral flavor so that cheddar and broccoli remain the predominant flavors.

    Ingredients
