Easter Bunny Parfait

    These eye-popping Easter bunny parfaits are the perfect complement to all that Easter chocolate. Made with store-bought ingredients, they take just a few steps to assemble and are a real treat.

    Silky, rich Greek yogurt layered with tart lemon curd is laid on top of a bed of almond-honey granola. Served with a wedge of lemon and a few yellow peeps, these Easter parfaits are perfect for the spring season.

    These parfaits are tangy and tart, rich and thick, with just a little crunch from the granola. Serve them alongside a fruity drink—this Easter mimosa or lemonade—and a few fresh berries. Almost like a dessert in a glass, these are decadent treats, like little glasses of sunshine.

    While you can spoon out the yogurt and lemon curd if you want to make the layers of curd and yogurt very neat, put each ingredient in its own zip-lock bag and snip off one of the corners. Then, using the bag like a pastry bag, pipe the yogurt and lemon curd into the glass.

    What You Need To Make Easter Bunny Parfait

    To assemble these Easter bunny parfaits, you need a lemon, a jar of good-quality lemon curd, full-fat Greek yogurt, and almond-honey granola. For fun, I like to serve these with yellow Peeps to be extra festive!

    I like to use an almond honey granola because it has a light flavor that pairs well with the lemon curd, but you can use another granola as long as it doesn’t have a very strong flavor (avoid chocolate granolas, for example). 

    I strongly recommend using full-fat Greek yogurt in this dish, also. The fat in the Greek yogurt creates a luscious texture that is less tangy than its lower-fat counterparts, which are delicious alongside the lemon curd. You can also substitute it with ricotta, but I prefer Greek yogurt here.

    Equipment: 

    To make these Easter bunny parfaits, you need a few 6-8 oz glasses, preferably short in size. You will also need a small knife and cutting board to cut the lemon wedges and a few spoons to dish out the yogurt and lemon curd. 

    How To Make Easter Parfait

    Prepare the lemon garnish: Slice a lemon into thin wheels, ¼ inch thick. Create a slide through the wheel that can be used to garnish the parfait. 

    Assemble the Parfaits: Put granola at the bottom of the glass. Layer yogurt on top of the granola.

    Add a thick layer of lemon curd. Garnish with the lemon wedge and a peep on top.

    Serve: Serve with a few yellow peeps, if desired. Enjoy!

    Recipe FAQs

    Can I prepare these in advance?

    If you are serving this at Easter brunch, assemble them right before your guests arrive. While you can prepare these parfaits in advance, the granola will soften significantly if left to sit for more than a few hours. Alternatively, you can reverse the order of the ingredients, putting the lemon curd at the bottom, then the yogurt, and topping the parfaits at the last minute with granola.

    Can I use my own lemon curd?

    Lemon curd is pretty involved, but if you want to make your own, or have some left over from your last citrus tart, go ahead! I think there are some really good brands on the market, however, so don’t feel like you need homemade to have a good parfait.

    • 16 oz full-fat greek yogurt
    • 1 cup lemon curd
    • 1 ⅓ cup honey-almond granola
    • 1 fresh lemon

    Instructions
     

    • Slice a lemon in ¼ inch wheels. Create a slit through half of the wheel to garnish the glass.
    • Add ⅓ cup of granola to the bottom of the glass.
    • Add 4 oz or ½ cup of greek yogurt to the glass
    • Add 2 oz or ¼ cup of lemon curd to the glass
