Olive oil Eggs Portobello mushroom Swiss cheese Parsley Salt and pepper


Sauté the Portobello mushrooms until golden brown. Set aside.

Whisk eggs with salt, pepper, and parsley in a small bowl. Cook over medium heat. 

Add the sautéed mushrooms and Swiss cheese to one-half of the omelette. 

Gently fold over the other half over the filling. Garnish and serve!
