Ingredients

  • 1 12” premade pizza dough
  • 8-10 breakfast sausages
  • ¼ cup butter
  • ½ cup all-purpose flour
  • 1 cup mozzarella cheese
  • 2 tsp salt and pepper
  • 3 eggs
  • ¼ cup green onions to garnish

Instructions

  • Preheat oven to 425˚F and prepare a pizza baking pan or cast iron skillet and set aside.
  • Roll out the pizza dough and place it into the skillet.
  • Bake for 5-10 minutes or until lightly toasted and holds its shape, and set aside.
  • In a saucepan, add breakfast sausages, crumble with a spatula, and sear until golden.
  • Once golden, add flour, butter, salt, and pepper, and mix until a thick gravy forms.
  • Pour gravy over the pizza dough.
  • Top pizza dough with mozzarella cheese and eggs, and bake for 15-20 minutes until fully cooked.
  • Garnish with sliced green onions and serve.

Notes

One way to elevate the dish is to use fresh dough. Though it is common to use a premade canned croissant or bread dough, using fresh dough creates a really crispy and fluffy crust that is perfect for absorbing the gravy and cheese.
Keep an eye on the thickness of the gravy. This recipe looks for a really nice and thick gravy, almost on the pasty end. This is because as the sausages bake in the oven, the oils will thin out the gravy.
