Frittatas don't always have to be for sharing. This frittata for one is delicious and simple to make for those mornings when you want an easy homemade meal. Made with cheddar cheese and broccoli, these classic flavors never disappoint. Serve it alongside a side salad or a couple of pieces of fruit, and you have the perfect meal for a weekend or a work-from-home morning.
Heat ½ tablespoon of oil in a small frying pan on medium heat.
Saute the broccoli for 4-5 minutes or until they start to brown. Set aside.
Whisk 3 large eggs in a bowl. Add a pinch of salt and pepper. Set aside.
Slice 2 oz of sharp cheddar cheese into thick long strips. Set aside.
Pour the eggs into the frying pan, surrounding the broccoli.
Add strips of cheese.
Sprinkle paprika over the dish.
Bake for 20-25 minutes, or until the eggs have just set.

Notes
This dish tastes best when the broccoli has been sautéed in the skillet first. This helps develop the flavor of the broccoli and gives it a little char.You can cook the broccoli raw, but you should cut the pieces a little smaller. The veggies cooked raw will have a little bit more bite, which might be what you are going for! If you do use raw, use olive oil to oil your pan before you bake the eggs.I recommend using sharp cheddar cheese, but you can also use mild or medium if you prefer those flavors better.This dish can be made in advance but it is best when it's fresh out of the oven. If you do reheat it, place it in a warm oven to rewarm. You can also put it on a microwave-safe plate and reheat it in the microwave. Use short time increments to reheat the eggs so that you can check the eggs frequently and avoid making them rubbery.
