Notes
The secret to this recipe is to mash the banana into the batter. The mashed banana will act as a binding agent, making for light and delicate pancakes. This is a great way to use up leftover bananas, as the riper they are, the sweeter they will taste in the pancakes.Whisk all your dry ingredients first, especially the baking powder. This will ensure that the pancakes rise evenly. Then you can incorporate the wet ingredients. If you’re looking for a protein-rich pancake, I suggest adding a scoop of protein powder. Depending on how dry the protein powder is, you may need to thicken the batter. Try a tablespoon of milk at a time until it gets back to the proper consistency.
