Breakfast just became much more flavorful with this spam breakfast sandwich made with runny eggs and spicy mayo layered between pillowy-soft Hawaiian dinner rolls.
First, make the spicy mayo. In a mixing bowl, combine the mayonnaise, sriracha, salt, and pepper. Stir to combine. Add 1 tablespoon of water or more until it reaches drizzling consistency. Set aside.
Cut the spam into 1-inch thick pieces. Preheat a non-stick pan to medium heat and drizzle with coconut oil. Cook the spam until crispy on both sides. Transfer to a plate.
Slice the rolls into two "sandwich sides" and toast in the same pan and fat left from the spam.
Heat a pan to medium heat and drizzle with olive oil. Crack the eggs and cook until the whites are almost settled but the yolks still runny. Remove from heat and transfer to a plate.
Spread the whole grain mustard on one side of the bread. Arrange the spam on top of the bottom side of the rolls, then the eggs, lettuce, and tomato. Drizzle with the spicy mayo. Top with the other half of the bread.
