Ingredients
  

  • 3 eggs
  • ¼ cup onions diced
  • ½ cup pulled pork
  • 1 ½ tbsp barbeque sauce
  • ¼ cup red bell peppers (chopped)
  • ¼ cup shredded mozzarella cheese
  • Cooking oil
  • Salt and pepper to taste

Instructions
 

  • Beat eggs, and add salt and pepper. Set aside.
  • Heat oil in a small skillet over medium heat.
  • Add onions and caramelize.
  • Pour beaten eggs over caramelized onions and cook lightly (1-2 minutes).
  • Add shredded mozzarella cheese, bell pepper, and pulled pork.
  • Drizzle barbeque sauce on one half of the omelette.
  • Once the edges have set and the bottom is golden, flip the other half of the omelette to cover the filling.
  • Remove from heat.
  • Top with the same ingredients in the filling.
  • Serve alongside a fresh salad and toasted ciabatta bread.

Notes

You can add whatever veggies to this recipe. Some days, I like red bell peppers in my pulled pork omelette, other days I like mushrooms and spinach. So long as the mozzarella is the first filling ingredient to be added! You want to ensure it gets all nice and melty.
You need a careful hand, especially when it comes to the flip. Many are led to believe that the best flip is done in one swift move, but the key is in how gently it’s done. If you’re not confident in your flipping skills, you can also cook the eggs into a “pancake” and top it with the pulled pork and the rest of the filling.
To make this recipe vegan, you can swap out pulled pork for jackfruit. It has a similar taste and texture to pulled pork when cooked! A great egg substitution is chickpea flour. It’s high in protein and fiber and, once cooked, it has a similar flavor and texture to eggs.
