Breakfast poutine made with poached eggs, cheese curds, and restaurant-style french fries is the warm, Canadian, comfort classic that is sure to fill you up.

Ingredients
  

  • 2 eggs
  • 1 package frozen french fries
  • 1 package premade gravy
  • 1 cup cheese curds
  • ½ cup tomatoes (diced)
  • ¼ cup green onions (sliced)

Instructions
 

  • Preheat the oven to 425˚F and prepare french fries according to package instructions.
  • Meanwhile, prepare the gravy package according to package instructions and set it aside once ready.
  • Boil a pot of water enough to submerge an egg.
  • Once boiling, create a vortex with a whisk and place the egg in.
  • Cook egg for 8 minutes or until done to your preference and place in an ice bath once ready.
  • On a serving plate, begin assembling poutine with fries, cheese curds, gravy, tomatoes, and poached eggs.
  • Garnish with green onions and serve.

Notes

Adding protein like bacon bits, pulled pork, lobster, and mushrooms will make this breakfast poutine dish richer. You can also go the lighter route and cut the richness with fresh vegetables like shredded lettuce, bell peppers, corn, and zucchini.
For a more calorie-conscious dish, you can swap the fries for baked sweet potato.
The secret to amazing poutine is in the cheese curds. You are going to want to get ones that create the signature “squeak” sound when you’re chewing on them.
