This Christmas smoothie is for those holiday-season mornings when you want a light, refreshing and healthy breakfast with all the holiday cheer. This strawberry mint smoothie blends together mint, strawberry, cherry, banana, and lime. Topped with crushed peppermint candies, this is a delicious, quick, and balanced treat that you can make for your family and friends.
1cupstrawberries (around 8)hulled and quartered, plus more for garnish
1cupfrozen cherries
½cup2% or whole milk
½cup2% or whole Greek yogurt
5 to 6whole mint leavesplus more for garnish
1tbsphoney
juice of half of 1 lime
1 to 2peppermint candies or candy canes
Instructions
Top, hull, and quarter the strawberries.
Slice bananas into ½ inch rounds.
Place into the blender the banana, 1 cup of frozen cherries, 1 cup of strawberries, the juice of one half lime, ½ cup of Greek yogurt, ½ cup of milk, 1 tablespoon of honey, and 5-6 whole mint leaves.
Blend until smooth.
Using a rolling pin, lightly beat on 1-2 peppermint candies until they are broken up into very small pieces and dust.
Pour the smoothie into glasses and garnish with extra mint leaves, peppermint dust, and strawberries.
Serve immediately.
Notes
When preparing the strawberries, I like to use a small paring knife because that lets me easily core out the strawberries. But, if you have a strawberry huller, you can use that to prepare the strawberries.You can use all frozen fruits in this if you prefer, but the result will be significantly thicker. This balance of fresh and frozen fruit produces a nice creamy texture and pourable consistency.Make sure you crush up the peppermint candy well so it is in very fine pieces that will slowly dissolve into the top of the drink.
