This quick and easy turkey breakfast sandwich is made with turkey patties, fried egg, drizzled with flavorful spicy mayo, and topped with tomato and lettuce. All of this sits on a well-toasted English muffin. Yum!

Ingredients
  

Sandwich

  • 4 English muffins divided
  • 4 turkey breakfast patties
  • 4 eggs
  • 4 slices cheddar cheese
  • 1 tsp salt
  • ½ tsp black pepper

  • lb ground turkey
  • 1 tsp sweet paprika
  • 1 tsp cumin
  • 1 tsp seasoning salt
  • ¼ cup parsley chopped

Homemade Turkey Breakfast Patties

  • In a large mixing bowl, combine the ground turkey, parsley, sweet paprika, cumin, salt, and pepper.
  • Mix well with your hands and form small balls. Press on top with the palm of your hand.

Turkey Breakfast Sandwich

  • Preheat a non-stick pan to medium heat and drizzle with olive oil. Cook the turkey patties on both sides until fully cooked through. If using frozen turkey patties, follow the instructions on the package.
  • When the patties are done, remove them from the pan and set them aside on a plate. In the same pan and fat, toast the English muffins on one side.
  • Heat a pan to medium heat and drizzle with olive oil. Crack the eggs and cook until the whites are almost settled but the yolks still runny. Using a spatula, flip the eggs and cook for an additional one minute for over easy eggs. Cook longer if you want the yolk to be firmer. Remove from the heat and transfer to a plate.
  • To arrange the sandwich, place the patties on top of the bottom part of the English muffin. Top that with the cheese slice, fried egg, and avocado. Sprinkle with salt and pepper.
  • Place the top of the muffin on top and serve.
