There are few classic breakfast dishes as simple, delicious and comforting as a bacon sandwich. Crispy, smokey bacon layered between butter-fried bread and rendered bacon fat, this sandwich is as easy to make as it is flavorful. Perfect for a quick, comforting breakfast or laid-back brunch gathering, this simple sandwich showcases bacon in all its glory!

2 slices of sandwich bread white or whole wheat 4 slices of thick cut streaky bacon 2 tsp butter room temperature ketchup for serving
Line a baking sheet with foil and place bacon strips vertically in the pan.
Place the bacon pan into a cold oven then set the temperature to 425F and cook the bacon for 25-30 minutes, or until browned and crispy.
While the bacon is cooking, toast the bread.
Spread butter from edge to edge on one side of each piece of bread, and place the buttered side down into a cold skillet.
Set the skillet over medium heat and toast the bread for 4-6 minutes or until golden brown, and set aside.
When the bacon is finished transfer it to a paper towel lined plate to drain.
Press the untoasted side of the bread into the rendered bacon fat left on the baking sheet.
Place the bacon strips onto the bacon fat soaked sides of the bread, then close the sandwich and create two halves by cutting diagonally.
Serve with a side of ketchup or preferred condiment sauce and enjoy!
