In a small bowl, crack your eggs and whisk until well combined and bubbles begin to form. Once ready, set aside.
Heat a large nonstick frying pan on medium.
Add 1 tbsp olive oil, followed by eggs. And cook, stirring occasionally until curds form, about 5 minutes.
Add salt, pepper, and cheese and remove from the heat to melt the cheese. Once ready, set aside.
Heat a clean frying pan on medium-high heat.
Add remaining olive oil followed by bell peppers and cook until soft, about 5 minutes.
Add pulled pork, and water if necessary.
Place a lid on top and let simmer for 5-10 minutes until pulled pork has warmed up and the flavors have combined. Once ready, set aside.
Begin assembling your burrito with a tortilla as the base followed by cheese, egg, pulled pork, beans, salsa, and fresh herbs.
Squeeze a little lime juice on top and roll tightly.
Heat your burrito in a large nonstick frying pan on medium heat until golden brown on all ends.
Once ready, slice it in half.
