Pulled Pork Breakfast Burrito

This filling, cheesy, meaty, and delicious pulled pork breakfast burrito is going to be the best part of your day. It’s filled with your favorite toppings, leftover pulled pork, and a lot of fresh ingredients. You can make this the day of or in advance for you to enjoy throughout the week.

Ingredients
  

  • ¼ cup cheddar cheese
  • 2 tbsp salsa
  • 1 egg
  • ¼ cup bell pepper diced
  • 1 tbsp fresh parsley
  • 1 tbsp fresh cilantro
  • 3 tbsp pinto beans
  • ½ lime squeezed
  • 2 tbsp olive oil
  • 1 large white tortilla
  • cup leftover pulled pork
  • Salt and pepper to taste

Instructions
 

  • In a small bowl, crack your eggs and whisk until well combined and bubbles begin to form. Once ready, set aside.
  • Heat a large nonstick frying pan on medium.
  • Add 1 tbsp olive oil, followed by eggs. And cook, stirring occasionally until curds form, about 5 minutes.
  • Add salt, pepper, and cheese and remove from the heat to melt the cheese. Once ready, set aside.
  • Heat a clean frying pan on medium-high heat.
  • Add remaining olive oil followed by bell peppers and cook until soft, about 5 minutes.
  • Add pulled pork, and water if necessary.
  • Place a lid on top and let simmer for 5-10 minutes until pulled pork has warmed up and the flavors have combined. Once ready, set aside.
  • Begin assembling your burrito with a tortilla as the base followed by cheese, egg, pulled pork, beans, salsa, and fresh herbs.
  • Squeeze a little lime juice on top and roll tightly.
  • Heat your burrito in a large nonstick frying pan on medium heat until golden brown on all ends.
  • Once ready, slice it in half.
  • Serve and enjoy!

Notes

You can swap pinto beans for other canned beans in your pantry. The same goes for salsa and cheddar cheese—your preferred options will also work.
When assembling the burrito, it’s important to place the cheese first so that when you reheat the wrapped burrito, the cheese melts into this delicious gooeyness. You can also use mozzarella if you want an even more cheesy flavor.
When reheating the pulled pork, keep an eye out for if it is drying out. If it is, adding a little water or barbeque sauce will help keep it warm and delicious.
If you’re in a hurry, this is a great meal to make in advance and keep in the freezer until ready to be reheated and eaten. This can last up to two weeks for optimal freshness.
