Red, White & Blue Breakfast Charcuterie Board

Once you try it, no Fourth of July backyard brunch party will be complete without this Red, White & Blue Breakfast Charcuterie Board. Filled with lots of fruits, nuts, cheese, mini waffles, and meats, all themed around red white, and blue, you’ll be shocked at how deceptively simple yet utterly impressive this is to put together. Charcuterie boards are great to serve along with other light foods, deviled eggs or hand pies, and mimosas, and can anchor the food for a party for hours.

Ingredients
  

  • 14-18 fresh strawberries
  • 2 cups fresh blueberries
  • 2 cups fresh raspberries
  • 1 ½ cups fresh blackberries
  • 1 cup candied walnuts
  • 16-20 mini waffles
  • 1 cup Greek yogurt preferably 2% or whole
  • 30-35 crackers
  • 15-20 mini mozzarella balls
  • ½ cup maple syrup divided
  • 1 mini watermelon or half a large watermelon
  • 8 oz assorted salamis and prosciutto
  • 8 oz white cheddar cheese

Instructions
 

  • Wash and dry 14-18 fresh strawberries, 2 cups of fresh blueberries, 2 cups of fresh raspberries, and 1 ½ cups of fresh blackberries. Set aside.
  • Cut the mini watermelon, making rounds or semi-circles that are 1 ½ inches thick.
  • Use a star cookie cutter to cut out pieces of watermelon.
  • Heat 16-20 mini waffles in your toaster oven or toaster.
  • In a small bowl, add 2 teaspoons of maple syrup to the yogurt. Mix well with a spoon. Set aside.
  • Put the remaining maple syrup in a small bowl. Set aside.
  • If the mozzarella balls are stuck together, separate them.
  • Assemble the board, starting with your largest items and moving to the smaller ones, making sure to fill out the board.
  • Finish with the berries, the nuts, and the mozzarella balls tucking them into the final spaces until there are none left

Notes

The hardest thing about making this charcuterie board is assembling it. I like to start with my big anchors — a bowl of yogurt, and a large wedge of cheese, and then build from there. Have a little bit of everything across the board, so nestle ingredients in different places. But you can also create zones — a meat zone, a fruit zone, a waffle zone, to keep things more organized.
I also like to keep a little extra of all of my ingredients on hand so I can replenish the board. Adapt the amount you have on hand for the number of people you plan to serve. I often find that things that are easy to pick up, the berries, crackers, and meats go the fastest, but the blocks of cheese take longer to be eaten.
These ingredients are interchangeable with your preferences. Just keep in mind that the colors of your substituted ingredients should not compete with red, white, and blue (avoid bright orange cheese or green or orange fruits). For the biggest visual effect, make sure that you have a lot of blue and red fruits and white cheese.
You cannot use frozen berries in this charcuterie board. When these fruits start to defrost, they will lose their form. Stick with fresh fruits for this board for the best success.
