Vegetarian Croissant Sandwich

This vegetarian croissant sandwich made with eggs, cheese, and vegetables is a delicious combination of flavors wrapped in a crispy and flakey pastry. Served with fresh greens or your choice of starch, this meal will be the highlight of your day and leave you coming back for seconds.

Ingredients
  

  • 2 croissant sandwich buns
  • 1 avocado
  • 2 tbsp hot sauce
  • ¼ cup cheddar cheese
  • 3 eggs
  • 2-3 leaves Heritage Greens
  • 2-3 slices red onion
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions
 

  • In a small bowl, add your eggs, salt, and pepper and whisk using a fork until aerated.
  • Heat a large frying pan on medium heat.
  • Add oil followed by eggs and cook until a light skin forms.
  • Add cheddar cheese, salt, and pepper and let melt slightly, about one minute.
  • Once cooked, begin folding your egg to hold the cheese in match the shape of the croissant sandwich and remove it from the pan.
  • Slice your croissant sandwich in half and begin assembling with your egg, hot sauce on the bottom half.
  • On the top half add avocado chunks and smooth out with a fork until evenly spread.
  • Add the remaining ingredients on top of the egg, place the top part of the sandwich to cover, and serve!

Notes

Finding a delicious hot sauce can make or break your dish. Try to get one with more flavor and tastes like the pepper rather than an acidic or vinegary one.
Remember to season the avocado after mashing it with a fork. If it is looking a little overripe, add a little bit of lime juice to live it up and prevent it from browning.
A sauce can go great with this as long as it doesn’t overpower the avocado. Mayo-based sauces are great with this or even a spread like a marmalade, almond butter, and quince can also work as well.
