Avocado Bagel Sandwich

This simple, delicious and nutritious avocado bagel sandwich is just the thing you need to spice up your mornings. Made with fresh ingredients, delicious avocado, and a tofu scramble, having this vegetarian sandwich does not mean sacrificing flavor. Treat yourself to one or two of these sandwiches and enjoy them throughout the week.

Ingredients
  

  • 2 bagels (we used an everything bagel)
  • 2 tbsp microgreens
  • 1 avocado (sliced)
  • 1 tomato (sliced)
  • 1/2 cup tofu
  • 2 slices cheese
  • 2 tbsp nutritional yeast
  • 2 tbsp turmeric
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions
 

  • Heat a large frying pan on medium heat. Add vegetable oil followed by tofu. Add nutritional yeast and turmeric and season with salt and pepper.
  • Cook for 8-10 minutes, stirring occasionally until warm and golden brown edges form. Once ready, remove from heat and set aside.
  • While the tofu cooks, toast your bagels in a toaster.
  • If you don’t have a toaster, feel free to bake in an oven at 350˚F for 8-10 minutes.
  • Begin assembling your bagels with tofu scramble, cheese, tomato, avocado, and micro greens.
  • Cover with the top of the bagel and serve!

Notes

The trick to this avocado bagel sandwich is to find the freshest avocados. This will give your bagel the most flavor. The best way to choose the avocado is to check the stem of the avocado. When you remove the stem and see that the inside of the avocado is green, that’s when you know it’s fresh.
A little bit of seasoning goes a long way in this recipe. Adding a pinch of salt and pepper to your avocados, tomatoes, and tofu scramble will bring out the freshness of all these ingredients and enhance the overall flavor!
If you wanted to make this recipe vegan, just swap the cheese for a vegan version or remove it altogether.
I find that dijon mustard will add a kick of flavor and bring the meal together.
