French Toast Egg Sandwich

This french toast egg sandwich is an amazing flavor combination to start your mornings. It has the sweetness and the delicious warm spices of french toast mixed with the savory filling taste of Swiss cheese, ham, and eggs. When drizzled with maple syrup and served with fresh berries, every mouthful is a mouthwatering experience.

Ingredients
  

  • 2 slices brioche bread
  • ¼ cup milk
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 3 eggs one egg for the mixture
  • ¼ cup Swiss cheese sliced or grated
  • ¼ cup deli ham sliced
  • Salt and pepper to taste
  • Fresh berries optional

Instructions
 

  • In a shallow bowl, add an egg, vanilla extract, milk, cinnamon, and nutmeg, and whisk until combined.
  • Place a large frying pan on medium heat.
  • Once hot, dip your brioche bread in egg mixture, drain off the excess, and place immediately in the frying pan.
  • Cook on for 4-5 minutes or until golden brown.
  • Flip and repeat until all bread slices are fully cooked. Once ready, set aside and keep warm.
  • To make your filling, grab a large bowl and add eggs followed by salt and pepper. Whisk until fully combined and set aside.
  • Heat a nonstick frying pan on medium-high heat. Add your eggs and scramble using a spatula every minute until curds form, about 5 minutes total.
  • When the eggs are less than a minute out until ready, add swiss cheese, and ham slices and mix until combined and the cheese melts. Once ready, remove from the pan and set aside.
  • Fill your brioche slices with eggs, slice in half, and serve with maple syrup and fresh berries (optional). Enjoy!

Notes

Like making any french toast, the trick to making the crisp yet chewy bite is to choose bread with a high-fat content. Breads like brioche and challah are best. 
When adding cheese and deli meats, it’s important to make sure they’re not going to be too salty or get saltier as they cook. I used Swiss cheese, but you can also use maple bacon, cheddar cheese, or any of your favorite cheese and meat combo to make this meal.
The spices in this recipe really go a long way. Nutmeg is ideal in the french toast batter but if you can’t find it, adding another spoonful of cinnamon will do the trick.
