Sausage and Cheese Omelette

This sausage and cheese omelette is a combination of salty yet filling with a mix of fresh vegetables that is sure to make your day brighter. Pair it with a salad for a well-balanced meal.

Ingredients
  

  • 3 eggs
  • ½ lb of breakfast sausages
  • 1 cup baby spinach chopped
  • 1 cup Colby Jack cheese
  • ½ cup tomato diced
  • 4 tbsp butter
  • Salt and pepper to taste

Instructions
 

  • Heat a large nonstick skillet over medium-high heat and add 2 tbsp butter followed by breakfast sausages.
  • Cook for 8-10 minutes and break them into bite-sized pieces. Once ready, remove from the pan.
  • In the same pan, add the tomatoes followed by the spinach.
  • Cook for 5 minutes until the spinach has wilted and the tomato has broken down. Once ready, remove from the pan and set aside.
  • In a large bowl, add the eggs, salt, and pepper and whisk until combined.
  • Heat a large nonstick skillet over medium-low heat.
  • Add butter, followed by eggs, and using a spatula, break the eggs gradually until a skin forms, about 5 minutes.
  • Add the sausage filling on one side followed by Colby Jack cheese.
  • Let cook for 2 minutes until the cheese has melted. Flip and plate.
  • Top with more cheese and serve with your choice of sides.
  • Enjoy!

Notes

When cooking down spinach, it can often be a quick change from leaf to a bitter clump of nothing. Keep an eye out for when the spinach is being cooked down as you want to keep the nutrients and flavor.
Some breakfast sausages can be very salty, and when combined with marbled cheese, it can be overpowering. Be sure to taste the sausages when they’re cooked beforehand and adjust the saltiness by adding more vegetables or eggs.
If you can’t find Colby Jack cheese, you can also use any marble cheese. If you would like to use any ingredients from your fridge, feel free to include that as well.
If you are a vegetarian, in lieu of breakfast sausages, portobello mushrooms will also do the trick! About one cup will also be enough to have that meaty flavor without it being too overpowering.
